In this video I demonstrate how to cook my bacon-wrapped stuffed chicken breast, a delicious meal for any occasion.
The stuffing is breadcrumbs, onion, smoked bacon and mushroom. This works so well with the bacon-wrap, as it locks-in the moisture and keeps the chicken breast nice and juicy. π
These are also nice cold and sliced as a sandwich filling.
Ingredients:
2 large chicken breast fillets.
4 or more rashers of bacon.
4 cocktail sticks.
For the stuffing:
1 slice of dry bread.
A quarter of a brown onion, chopped.
5 mushroom stalks or two mushrooms, chopped.
1 rasher of smoked bacon, chopped and fried to a crisp.
Salt and freshly-ground black pepper to taste.
