How to Cook Beef & Beer Stew with Herb Suet Dumplings 😋
In this video I demonstrate how to cook my boozy beef stew, cooked with Newcastle Brown Ale and topped with pillowy herb suet dumplings. This beef n beer stew is a great winter warmer and a much-needed dose of comfort food.
Disaster recovery:
I initially started this video project with the intent to use my slow cooker/crock pot, but those pesky kitchen gremlins sabotaged my slow cooker, so I had to finish the stew in my stew pot.
Fortunately the stew turned out amazing!
Ingredients:
700g lean diced stewing beef.
1 large onion, finely chopped.
12 closed cap mushrooms.
4 carrots, coarsely chopped.
120g cabbage, chopped.
120g cut green beans.
4 potatoes, quartered.
2 tablespoons of tomato puree/paste.
Oil or lard for frying.
1 bottle of English brown ale.
Salt and black pepper to taste.
4 teaspoons of plain/all purpose flour.
Water as required.
For the dumplings:
4 tablespoons of plain/all purpose flour
2 tablespoons of
Half a teaspoon of baking powder.
1 teaspoon of salt.
Black pepper to taste.
1 teaspoon of mixed dried herbs.
Water as required.

How to Cook Beef Pasta Bake with Instant Garlic Bread
In this video I demonstrate how to make my beef pasta bake with instant garlic bread. Few things we eat are quite as satisfying as a tasty pasta bake, so my aim here is to pack as much deliciousness as I can into this classic Italian-style gratin.
Ingredients:
One and a half brown onions, finely chopped.
4 cloves of garlic, finely chopped.
500g lean (5% fat) ground beef mince.
1 tablespoon of Italian dried herbs.
500g tomato passata/ sieved Italian tomatoes.
Water as required.
Two and a half tablespoons of tomato puree/paste.
1 beef stock cube.
Salt and black pepper to taste.
250g penne pasta, cooked 'al dente'.

How to Cook Lamburgers with Tzatziki Sauce | Lamb Burger Recipe
In this video I demonstrate how to cook my lamburgers with tzatziki sauce, a delicious burger which is good for frying, grilling or even oven-baking. This is my favourite lamb burger recipe 😋
Ingredients:
475g minced/ground lamb.
8cm/3 inches of cucumber, grated.
2 cloves of garlic.
A squeeze of fresh lemon juice.
A quarter brown onion in slices.
A quarter brown onion, finely-chopped.
1 tomato, thinly-sliced.
3 tablespoons of creme fraiche/sour cream/thick Greek yoghurt.
1 heaped teaspoon of English mint sauce.
2 or 4 Burger buns, as required.
Makes 2 large burgers or 4 regular-sized burgers.

How to Cook Colonial Beef Curry
In this video I demonstrate how to cook colonial beef curry, a kind of hybrid between Indian-style curry and a British or Irish stew. Curries like this are a popular choice on British pub grub menus.
Ingredients:
700g lean diced stewing beef.
1 onion, finely chopped.
1 onion, coarsely chopped.
3 carrots, coarsely chopped.
3 potatoes, quartered.
3 tablespoons of tomato puree/paste.
6-8 cloves of garlic, peeled.
2 thumb-sized pieces of fresh ginger, chopped.
1 bay leaf.
2 mild green chilli peppers (optional).
3 hot green bird-eye peppers (optional).
1 teaspoon of panch poran (optional).
Half a teaspoon of garam masala.
3 heaped teaspoons of curry powder.
A sprig of dried or fresh curry leaves (optional).
Oil, lard or ghee for frying.
1 beef stock cube.
1 teaspoon of sugar.
Water as required.
Garnish:
Chopped fresh tomato and chopped fresh onion.

How to Cook Kedgeree with Smoked Haddock | British Indian Breakfast Rice
Kedgeree is one of my favourite rice dishes. I believe it has it's origins in the British Raj in India. I know it came to fashion in Britain during the 19th Century, probably as a result of returning expatriates wanting to duplicate the best of Indian cuisine here at home in the UK.
Kedgeree is usually served for breakfast, but it also makes for a tasty light lunch or evening meal.
My version uses smoked haddock, but any good smoked fish works well, even smoked oily fish like mackerel and herring.
Ingredients:
440g smoked haddock fillets.
250ml chicken stock.
250ml water.
1 bay leaf.
A small stick of cinnamon/cassia bark.
Half a medium onion.
Oil for frying.
3 cloves of garlic.
1 teaspoon of curry powder.
1 teaspoon of turmeric powder.
A quarter teaspoon of black pepper.
Half a teaspoon of ginger powder.
380g/2 cups of basmati rice.
Hot water as required.
120g frozen garden peas.
Garnish:
2 hard boiled eggs, quartered.
Salt and freshly-ground black pepper.
Fresh or dried parsley.
Finely chopped spring onions (optional).
Lemon wedges (optional).
Fried onions (optional).
NO CHEESE. NOT EVEN A LITTLE! 😄

How to Cook Bacon-Wrapped Stuffed Chicken Breast 😋
In this video I demonstrate how to cook my bacon-wrapped stuffed chicken breast, a delicious meal for any occasion.
The stuffing is breadcrumbs, onion, smoked bacon and mushroom. This works so well with the bacon-wrap, as it locks-in the moisture and keeps the chicken breast nice and juicy. 😋
These are also nice cold and sliced as a sandwich filling.
Ingredients:
2 large chicken breast fillets.
4 or more rashers of bacon.
4 cocktail sticks.
For the stuffing:
1 slice of dry bread.
A quarter of a brown onion, chopped.
5 mushroom stalks or two mushrooms, chopped.
1 rasher of smoked bacon, chopped and fried to a crisp.
Salt and freshly-ground black pepper to taste.

Meatballs Baked with Tomato Sauce and Cheese
In this video I demonstrate how to cook my budget-friendly meatballs, baked with homemade tomato sauce and cheese. This is a super-tasty yet inexpensive meal that children will really enjoy.
Ingredients:
For the meatballs:
170g sage & onion stuffing mix.
425ml boiling water.
450g beef mince/ground beef minimum 20% fat. I used 12% fat and added 1 tablespoon of beef suet.
Salt and black pepper to taste.
1 egg.
Pinch of grated nutmeg.
1 tablespoon of tomato ketchup.
For the sauce:
1 medium onion, finely chopped.
3 cloves of garlic, coarsely chopped.
500ml tomato passata/sieved tomatoes.
Salt and black pepper to taste.
For baking:
200g grated mature cheddar cheese.

King Prawn Curry with Petits Pois | Jumbo Shrimp Curry with Peas
In this video I demonstrate how to cook my king prawn curry with petits pois. The sweetness of the king prawns is enhanced by the yielding sweetness of the petits pois to build a real taste sensation in this delicious jumbo shrimp curry with peas.
Ingredients:
360g fresh or defrosted frozen king prawns/jumbo shrimp butterfly-cut.
For the curry paste:
8 cloves of garlic, peeled.
A thumb-sized piece of fresh ginger, chopped.
3-5 red bird-eye chilli peppers.
2 tablespoons of vegetable oil.
2 tablespoons of curry powder.
3 tablespoons of vegetable oil for frying.
A scant teaspoon of panch poran.
A pinch of curry leaves.
100ml water.
2 heaped teaspoons of creme fraiche or sour cream.
500ml tomato passata.
300g petits pois or garden peas.
1 teaspoon of sugar.
Half a teaspoon of garam masala.
A slack handful of freash coriander/cilantro as garnish.
