How to Make Saffron and Cardamom Junket Pudding


In this video I demonstrate how to make saffron and cardamom junket pudding. Junket is a delicious and easy to digest dessert that is very easy to make, and something quite rare! You will not find junket commercially available because its structure is not able to survive the vibrations of transportation, so you simply have to make it for yourself. Ingredients: 1 Imperial pint/20 fl oz fresh full cream milk (UHT milk will not work) The seeds of 3 green cardamom pods. Half a teaspoon of sugar for grinding A pinch of saffron 2-3 tablespoons of sugar sweetening per your taste Half a teaspoon of vanilla extract 1 teaspoon of vegetarian or animal rennet (available from online retailers) Another pinch of saffron as a garnish Enjoy! *** Remember to check the info cards for links.
